Cowboy Chicken Enchilada Sauce Recipe

This is what I discovered when I went to college in the small town of Sherman near the Oklahoma border. Green sauce was gone, with sour-cream enchilada sauce to be found in its place. Different, yes, but just as satisfying.

Cowboy Chicken Enchilada Sauce Recipe

The sour cream enchiladas were stuffed with shredded chicken that had been spiced with generous amounts of salt and black pepper, a simple formula that still yielded plenty of flavor. The sauce itself was a creamy blend of sour cream and chicken broth.

Cowboy Chicken is a meal in and of itself with the generous amount of toppings that smother the chicken. If you want a quick and easy truly one dish meal, you can have it with this recipe. Sprinkle half of the Italian Dressing Mix evenly over the chicken. Make note that Italian Dressing Mix and Italian Seasoning are different. In this recipe we use Italian dressing mix. You can buy this at the store on the salad dressing aisle, or you can use my homemade version of Italian Dressing Mix. If you are gluten free I recommend you use the homemade version. It is quick and easy to make and can be kept on hand for up to a year to make this dish again and again!

Yes, as long as the chicken is boneless and skinless it should work well in this recipe. The cooking time will likely change based on the thickness and cut of the chicken though. All poultry should be cooked to an internal temperature of 165F to be safe to consume.

BBQ chicken and black bean and corn salsa are the perfect flavor combination for a delicious and easy cowboy quesadilla. My favorite part of this chicken quesadilla is how fast it comes together. I am a big fan of easy delicious meals that come together in less than 30 minutes. I am also a big fan of rotisseries chickens from my local grocery store. The chicken is juicy and easily shreds in minutes. In a medium size bowl add cooked shredded chicken and BBQ sauce. Mix will.

Down here in Texas, we know our way around a good authentic Tex-Mex enchilada, and this recipe is no exception. This recipe was developed with high expectations and seasoned taste buds, and it never disappoints.

The filling is no time to skimp out on flavor, and if you like a good cheesy beef enchilada, this is the recipe for you. The enchilada filling begins with a finely diced onion, followed by the browning of some seasoned ground beef.

The gravy bubbles and thickens, and the end result is that savory and addictively delicious beefy enchilada sauce, perfect for smothering enchiladas, spreading onto rice and beans and scooping up with tortilla chips.

Preheat oven to 375 degrees. Combine diced onion, green enchilada sauce, Rotelle tomatoes, corn and sour cream in a large mixing bowl. Blend well. In a 9 x 13 baking dish, layer corn tortillas, chicken, cheese, and sauce. Repeat process until pan is almost full. You should get at least three layers. Cover with shredded cheese and bake for 30 min. Let stand 5-10 min. before serving. Now enjoy Country Chicken Enchilada Casserole for the whole family!

This recipe is super easy and quick! You will need red enchilada sauce for this soup. Many of you have asked me what brand I use, and to be honest I just use whatever brand I find at my grocery store, or I make my own.

Great recipe! Mine turned out pink somehow. I accidentally picked up hot enchilada sauce instead of mild, which was a happy mistake because it did wonders for the overall flavor. My husband ate it with crackers and likes it that way.

This cheesy chicken enchilada soup was fantastic! For whatever reason, red enchilada sauce nor mozzarella could be found at my local grocer. I lucked out and found a seasoning package of McCormick red enchilada sauce, and some shredded Quesadilla cheese. I doubled the recipe so I could take some to my Mother and Aunt. They loved it too! Thanks for sharing all your recipes!

I used good quality ground chicken and it seemed to be made for this recipe. I also added a few tablespoons of taco seasoning mix as I felt the cumin was not enough. Excellent. Thanks for the recipe.

I am excited to give this recipe a try but no matter how many times I scroll through there is no recipe for Chicken Enchiladas! There is a recipe for Chicken and Spinach Enchiladas but not the regular chicken enchiladas.

This is my favorite kind of recipe. It was created mainly out of what I had on hand and what sounded delicious. I wanted to create a Mexican-inspired dinner made in one skillet that was, saucy, cheesy, and with plenty of peppers and corn. I took a little shortcut to keep things simple by using a fajita seasoning blend of spices and store-bought enchilada sauce.

Just like fajitas, this recipe starts with chicken and lots of peppers. All pan-cooked in a skillet with a mix of seasonings. I use a homemade fajita seasoning mix that I love (directions in recipe notes). It takes only seconds to make so I highly recommend it!

Made this tonight and loved it! I made a half recipe of the homemade fajita seasoning, and what was left after using 2 tbsp on the chicken, I put the rest in the corn mixture and omitted the chili powder and salt. Looking forward to the leftovers later this week!

It is blended into a heat-and-serve mild green enchilada sauce. Dip your heated corn tortillas into the sauce, as you stack them on your plate. Garnish each with onions, grated cheese and diced boneless chicken. Bringing our family enchilada recipe to your table ensures that your family will enjoy an excellent Mexican Style chicken enchilada dinner. Gluten free.

If I could give this 10 stars, I would. I made this for dinner for my husband and myself. The two of us ate half of it at once. My husband is not a big Mexican food fan but he loved this. I knew putting it together it would be good. Love the green chiles and enchilada sauce. Bold, delicious flavors. Look forward to the leftovers.

I made this recipe so it would make enough enchiladas to freeze some or feed a crowd. I got 18 enchiladas which I divided between 4 containers. You can absolutely half this recipe, but you might as well make the whole batch and freeze some, or invite friends over for dinner. They also taste great the next day. 350c69d7ab
